I'm using the HTC calendar widget and every time I try to edit an event, it changes the time by 3 hours and changes the time zone from Eastern to Pacific. This is a real pain. Any suggestions? It didn't always do this. Only had the phone for a couple of months.

Try this: go to Menu -> Local Time Settings -> there should be an option for Automatic check. Try disabling it to make sure the network will not set it automatically.

I mean, there's no actual tab/link that says Menu. I've gone into settings app and also hit the info button from the calendar and can't find what you're talking about.
