I use a lot of the Google apps especially, be it native on the phone to cloud integration with those available on the web with my Google account.
Beyond that there's radio streaming: Pandora, Iheartradio, and a few German radio stations (search "hit radio" in the Market). Also, Facebook, Twitter, Foursquare, Google Maps/Navigation and Sprint's Telenav product, the Weather Channel app, and USAA's banking app.

These currently are the only three that I have on there now and boy, they sure do keep me entertained at the airport, meetings, and or where ever I may happen to be standing picking my nose

replying to my own thread with some cool FREE ones that i've found:
shazam - song identifier
sportstap - favorite sports teams news/etc. notifications
shopsavvy - uses bar code scanner to find cheaper prices of the barcode you are scanning
camera360 - really cool camera features / in camera processing techinques
google sky - point to the sky, see real time constellation/stars/moon data
lookout - create an account at mylookout.com .. find your phone if you lose it via gps map, make your phone scream, and backup your phone daily
google translate - translates to many diff. languages
scanner radio - fire/rescue/police scanners locally and all over the u.s.
wikimodible - wikipedia mobile

Here are the ones I can't live without...
Google Listen - For Audio podcasts. I don't use the radio OR my iPod in the car anymore.
Job Log - Keeps track of how much time I spend on different graphic design projects.
File Manager - Self explanatory
Bible (YouVersion) - Fantastic Bible app.
FastReader - RSS Reader. Syncs with Google Reader
SpringPad - for notes and stuff. I used to use Evernote, SpringPad is MUCH better.
Seesmic - Twitter
SwiFTP and AndFTP - Two awesome FTP clients. One connects to an FTP server from you phone, the other creates an FTP server on your phone to access from a computer.
And the previously mention Snesoid.

Sound Hound- Great for music, will listen to songs you play and tell you all the info you need to know about them.
Yelp- Great for business reviews and finding places near or far. IE looking for a place to eat, will tell you all the nearby places, gives you a star average, you can read reviews and will give you basic information on the place.

- mVideoPlayer – my favorite app when it comes at watching movie on the phone. It can play mkv, avi, mp4, m4v and 3gp files and supports subtitle
- Titanium Backup - backup your apps (paid apps also) + their associated data and restore when your need. Eg. When you wipe out your phone/install another firmware (Requires ROOT)
- Watchdog Task Manager Lite - app which monitors your device and when an application malfunctions and starts using all your CPU power (without a reason), you'll be able to kill it - the only thing you need, Android doesn't require a Task Manger
- Astro File Manager - probably the best app to manage your files on your phone without the need for a PC
- Beautiful Widgets - great widgets for Android with weather and clock
- Backgrounds HD Wallpapers - this app helps you find background wallpapers & contact themes
- Launcher Pro - great apps launcher which makes your device smoother and adds cool features
- ShopSavvy Barcode Scanner - my choice when it comes to scan barcodes on CDs, books and so on
- handyCalc Calculator - do you need to perform complex mathematical equations or functions ? Use this
- Evernote - probably the best cloud-based app you can find to helps you to take notes, capture photos, create to-do lists and so on
